This dish is easy, cheesy, and will warm you up on some of these cold days we are having! And bonus because it sneaks in veggies!
Ingredients
1lb ground beef
1 yellow onion, diced
Salt and pepper
2Tbsps olive oil
4 ounces of softened cream cheese
1/4 parmesan cheese, shredded
2.5 cups shredded mozzarella
4 handfuls of spinach
2 10oz bags cheese tortellini
2 24 oz jars Rao's Sausage and Mushroom marinara (or your fav!)

Preheat oven to 350 degrees.
Cook your tortellini in salted water according to package directions to Al dented. Drain and set aside.
Heat olive oil in large skillet over medium high heat. Add onion and cook until softened. Add ground beef, salt and pepper. Cook and break up beef, allowing to cook until no longer pink. Add in softened cream cheese, parmesan and mozzarella and allow to melt completely. Add in spinach and allow it to wilt down. Finally add sauce and stir to combine, allowing it to come to a simmer. Remove from heat.
Take a 9x13 deep baking dish and spray with nonstick spray. Add half the tortellini and spread evenly across bottom. Spread half sauce mixture in top of pasta. Top with 1 cup of mozzarella. Repeat the layers. Place in the preheated oven for 15 to 20 mins or until cheese is beginning to brown and bubbly.
Makes a ton but freezes like a champ!
